Winter's Coming Lentil Soup

Serves 6

Ingredients

1 tablespoon olive oil
1 cup diced onion
2 cloves garlic, minced
2 - 15 ounce cans diced tomatoes
2 - 14 ounce cans low-sodium beef or vegetable broth
1/4 cup barley
1 teaspoon salt
1 teaspoon dried basil
1 teaspoon dried oregano
1 cup scrubbed, diced red potatoes
1 cup peeled and diced rutabaga
1 cup sliced carrot
1/2 cup lentils

Instructions

Heat olive oil in stockpot or dutch oven. Add onion and garlic and sauté over medium-high heat until tender and fragrant. Add tomatoes, broth, barley, salt, basil and oregano. Reduce heat, cover and simmer for 20 minutes. Add potatoes, rutabaga, carrots and lentils. Simmer until lentils and vegetables are tender. Taste, adjust seasoning and serve.
