Wild Rice, Chestnut & Cranberry Stuffing
Serves 6
Ingredients
4 tablespoons butter or olive oil
6 shallots, minced
4 stalks celery, chopped
2 cloves garlic, minced
2 cups wild rice
4 cups vegetable or chicken broth
1 cup cranberries
1/2 cup chopped parsley
1 can chestnuts, drained and chopped
Instructions
Melt butter in large skillet over medium heat. Add shallots, celery and garlic and sauté for 3-4 minutes. Add the wild rice and broth and bring to a boil. Reduce heat and cover. Simmer until rice is tender, about 35-45 minutes. Add more broth if necessary to prevent rice from sticking as it cooks. Add cranberries, parsley and chopped chestnuts. Toss, season to taste and serve instead of traditional holiday stuffing.
