Veggies in Vinaigrette Salad

Serves 4-6

Ingredients

SALAD:
1/4 cup julienned red onion
1 cup broccoli bite size pieces
1/4 pound carrots peeled and sliced
1/2 cup summer squash thin rounds
1/2 cup zucchini half moons
1/4 cup red bell pepper julienned
1 cup celery sliced on diagonal
1/2 cup snow peas stemmed
1/4 cups artichoke hearts

DRESSING:
1 oz. red wine vinegar
1 oz. olive oil
1/3 teaspoon salt
1/3 teaspoon pepper
1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons honey
3/4 teaspoons garlic minced

Instructions

Prepare and combine vegetables. Make dressing: whisk together vinegar, oil, salt, pepper, mustard, honey and garlic. Add to salad as needed before serving.
