Vegetarian Bolognese Sauce

Serve this rich, hearty tomato sauce over pasta, grains, or split baked potatoes.

Ingredients

1 tablespoon olive oil
1 medium onion, finely chopped
2 or 3 cloves garlic, minced
1 (8-ounce) package tempeh, crumbled into small pieces
1 tablespoon soy sauce
1 (28-ounce) can whole peeled tomatoes
1 1/2 cups tomato puree (homemade or from a 28-ounce can)
2 tablespoons chopped fresh or 2 teaspoons dried basil
2 tablespoons chopped fresh parsley
2 teaspoons dried oregano
Salt and freshly ground pepper to taste

Instructions

In a large saucepan heat oil over medium heat. Add onion; sauté, stirring often, until golden, about 5 minutes. Add garlic; cook, stirring often, just until fragrant, about 15 seconds. Stir in tempeh and soy sauce. Cover; reduce heat slightly. Simmer 3 minutes; remove cover. Stir in remaining ingredients except salt and pepper; cover. Simmer 10 minutes. Season with salt and pepper.
