Vegan Double Chocolate Almond Cookies [DF/V]

Ingredients

1 cup whole wheat pastry flour
1 cup rolled oats
1/3 cup unsweetened cocoa
1 cup almonds
1/4 cup date sugar
1/4 teaspoon salt
1/4 teaspoon baking powder
1 cup vegan chocolate chips
1/2 cup canola oil
1/2 cup maple syrup
1 teaspoon almond extract

Instructions

PREHEAT OVEN TO 325°F
Grind 1/2 c. almonds in blender or food processor to make a very fine grind. Chop the remaining nuts coarsely. Cream together oil, maple syrup, vanilla and ground nuts. Stir in remaining ingredients until incorporated. Scoop cookies by rounded tablespoons onto baking sheet. Bake at 325°F for 8 - 12 minutes. Cool on pan 4 minutes before removing.
