Turkey & Black Bean Chili

Perfect cold weather friend. Add some grated cheddar and some good bread.

yield: 1/2 gallon

Ingredients

1/4 cup olive oil
1 tablespoon minced garlic
2 1/4 teaspoons salt
1 1/2 teaspoons pepper
1 large onion, chopped
1 bunch scallions, sliced
2 lbs. ground turkey
1 1/2 teaspoons cumin
1 1/2 tablespoons chili powder
3/4 teaspoon oregano
3-14 oz Muir Glen Diced Tomatoes WITH Chiles
4 1/2 oz. tomato paste
2 1/2 cups cooked black beans
1/3 cups minced cilantro
10 oz. frozen corn

Instructions


1. In oil, sauté the garlic, salt, pepper, onions and scallions for 7 minutes.
2. Add the turkey and cook till browned.
3. Add cumin, chili powder, oregano, tomatoes and paste, and simmer for 1 hour.
4. Add beans and simmer 1/2 hour.
5. Add cilantro and corn and heat through.
