Tomato Spinach Soup

Ingredients

1 tablespoon oil
1 cup onion -- diced
1 teaspoon basil
1 teaspoon thyme
4 cups tomatoes -- canned, crushed
3 cups fresh spinach
3 tablespoons flour
1/3 teaspoon salt
3 cups vegetable broth
1/3 teaspoon white pepper

Instructions

Heat oil in stock pot. Sauté onion, thmye and basil. Add mushrooms and cook until tender. Stir in tomatoes and spinach. Simmer 10 minutes. Whisk broth and flour together. Add to tomatoes in several additions, stir in salt and pepper. Simmer.
