Tomato Garlic Soup with Tortellini
Serves 6
Ingredients
2 tablespoons olive oil
3 tablespoons minced garlic
1/2 teaspoon paprika
8 cups vegetable broth
2 cups diced tomatoes (fresh or canned)
2 cups fresh spinach, chopped
9 ounces fresh or frozen tortellini, already cooked
Instructions
Heat olive oil in large stock pot. Add garlic and sauté over medium heat until garlic is golden. Stir in paprika and continue to sauté until fragrant. Add broth. Bring to a boil. Reduce heat and stir in tomatoes, spinach and tortellini. Heat through and serve. Great topped with grated parmesan or romano and croutons!
