Tofu Ramen Noodle Soup

This mouthwatering soup features protein-packed tofu and quick-to-fix ramen noodles.

Ingredients

6 cups vegetable or chicken broth
1 (8-ounce) package Oriental style baked tofu, diced
2 (3-ounce) packages ramen noodles
1 tablespoon soy sauce
1 teaspoon minced fresh ginger
2 teaspoons hot pepper sesame oil
3 green onions, sliced diagonally
Soy sauce

Instructions

In a medium saucepan combine broth, tofu and noodles. Cover; bring to a boil over high heat. Uncover; stir to break up noodles. Reduce heat to medium. Stir in 1 tablespoon soy sauce and the ginger. Simmer, uncovered, for 10 minutes. Remove from heat. Stir in hot pepper sesame oil; sprinkle with green onions. Season with additional soy sauce if desired.
