Tabbouleh (Tabouli)
A bulgur wheat salad, flavored with lemon juice, lots of parsley and mint is a probably the most familiar Middle Eastern dish in the United States.
Ingredients
1 c. bulgur
6 roma tomatoes, diced
4 scallions, chopped
3 c. parsley, chopped
1/2 c. fresh mint, chopped
1/2 c. olive oil
1/3 c. lemon juice
salt & pepper, to taste
dash of cinnamon
Instructions
Rinse bulgur and place in a bowl. Cover with cool water and let soak until bulgur is tender to the bite, about 20-30 minutes. Drain thoroughly and fluff with a fork. Toss bulgur with tomatoes, scallions, parsley and mint. Whisk together olive oil, lemon juice, salt, dash of cinnamon and pepper. Toss with bulgur mixture. Cover and refrigerate until ready to serve. This recipe lends itself well to personalization. Add minced garlic, crumbled feta cheese, halved olives, or whatever else you might like!
