Sweet Potato Casserole

Ingredients

3 pounds yams or sweet potatoes, peeled, diced and cooked until tender
1/4 cup brown sugar
1/4 cup orange juice
1/4 cup butter
1 tablespoon orange zest
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 pinch ground ginger
2 large eggs, beaten

Instructions

Preheat oven to 350°F. In large bowl, combine sugar, juice, butter, orange zest and spices with a wooden spoon or spatula. Stir in eggs. Season with salt and pepper. Mash in cooked yams and transfer to a 2 quart baking dish. Bake until heated through and just set, about 45 minutes. Serve, garnished with some chopped parsley.
