Stuffed Squash [DF/V]
Serves 4
This delicious dish makes a great main course for the vegetarians at your Holiday table or a nice side to the turkey or even the Un-Turkey®.
Ingredients
2 acorn squash, halved and prebaked
2 tablepoons olive oil
1 cup minced onion
1 clove garlic, minced
1 stalk celery, chopped
1/2 teaspoon salt
Black pepper, to taste
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
1 cup crumbled tofu or shredded tempeh
1/4 cup vegetable broth
1/4 cup toasted walnuts
2 cups bread crumbs
Instructions
Heat olive oil in large skillet. Add onion, garlic, celery, salt, pepper, thyme, sage and tofu or tempeh. Sauté until vegetables are tender. Stir in remaining ingredients. Taste and adjust seasoning. Preheat oven to 350°F. Fill prebaked squash with stuffing. Place in baking dish, cover and bake until heated through, about 20-30 minutes.
