Strawberry Spinach Salad
Ingredients
10 oz. fresh spinach
1 tablespoon vegetable oil
1 pint fresh strawberries
2 tablespoons cider vinegar
2 tablespoons sliced almonds
1/8 teaspoon almond extract
1/2 teaspoon butter
1/4 teaspoon poppy seeds
2 tablespoons honey
Instructions
Rinse and drain spinach. Wash, hull and halve berries.
Combine the almonds and butter in small saucepan. Cook on medium heat until nuts are lightly toasted. Cool.
Combine honey, oil, vinegar, almond extract and poppy seeds. Mix or shake dressing well.
Tear spinach into bite-sized pieces, removing stems. Place in salad bowl, add strawberries and dressing and toss lightly to coat ingredients. Sprinkle with toasted almonds.
