Steelhead Trout Baked with Pine Nut Garlic Butter

This is a flavorful and easy way to prepare any meaty fish. Try with salmon, tuna or swordfish.

Ingredients
2 6 to 8 oz. pieces of fish
2 teaspoons butter or olive oil
2 cloves garlic, minced
1 tablespoon minced parsley
2 tablespoons pine nuts
black pepper
salt
Instructions
PREHEAT OVEN TO 425°F
Mince the garlic and parsley.
Lightly chop the pine nuts.
Sauté garlic, parsley, pine nuts, and dash of pepper and salt in the butter.
Arrange filets on parchment paper lined baking pan.
Spread the nut mix over top of fillets, and push lightly down with your hands to evenly coat.
Bake until done, approx 15 minutes.
