Spinach Rice Salad

Ingredients

1 cup of brown rice, uncooked
1 cup of wild rice, uncooked
1 box of button mushrooms, sliced
1 bunch of green onions, diced
1 can of sliced water chestnuts
1 / 2 cup of slivered almonds, toasted
1 can of Mandarin orange slices
2 cups of fresh baby spinach
1 / 2 cup of diced red pepper
add salt and pepper to taste


Dressing:
6 ounces of orange juice concentrate
1 / 4 tablespoon of fresh ginger
1 / 2 cup of canola oil
2 teaspoons of fresh minced garlic
1 / 3 cup of brown rice vinegar
a pinch of cayenne

Instructions

Cook rices separately. Stir in other ingredients. Pour dressing over rice mixture and let sit for at least a few hours, refrigerated. Makes 4 to 6 servings.
