Spinach Pear Salad

Ingredients

3 cups of baby spinach, washed and dried
3 ripe yellow pears, core but do not peel and cut lengthwise into slices
2 tablespoons of blue cheese, crumbled

Dressing
2 tablespoons of balsamic vinegar
3 tablespoons of extra virgin olive oil
3 tablespoons of orange juice
1 clove of garlic, crushed
1 / 4 cup of walnuts, chopped and toasted
salt (optional)

Instructions

Toast walnuts in a 325° oven for a few minutes. Put spinach, pears and cheese in a bowl. Toss with dressing. Sprinkle walnuts on salad while still warm.
