Spicy Cashew Stir Fry [WF/GF/DF/V]

Ingredients

Sauce:
1 tablespoon arrowroot
1/4 cup water
1 cup vegetable broth
2 tablespoons wheat-free tamari
1 teaspoon fresh grated ginger
1 teaspoon minced garlic
1/2 teaspoon crushed red pepper flakes
Stir-fry:
2 tablespoons soy oil
1 pound extra-firm tofu, drained and diced
3 cups broccoli florets
1 red bell pepper, julienned
2 large carrots, peeled and sliced
1/2 cup snowpeas, strings removed and halved
1/2 c. whole cashews

Instructions

To prepare sauce, stir arrowroot into water until smooth. Add remaining sauce ingredients and set aside. Heat oil in large skillet over medium-high heat. Add tofu. Stir-fry until tofu starts to brown evenly. Add broccoli, bell pepper and carrots, stir-fry for about 3 minutes. Reduce heat to medium. Stir the sauce again and stir into skillet. Cook until mixture thickens some. Serve topped with cashews. Season to taste with tamari.
