Spicy Arizona Garden Salad
Ingredients
2 - 15 ounce can garbanzo beans, drained and rinsed
1/2 head cauliflower, cut into florets
1 red bell pepper, julienned
1 cup fresh green beans, ends trimmed
1 cup black olives, whole or halved
Dressing:
1/4 cup olive oil
1/3 cup vinegar, any kind will do
Juice from 1/2 lemon
1 tablespoon honey
1/2 teaspoon paprika
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
2 cloves garlic, minced
1 tablespoon dijon mustard
Instructions
Combine beans, cauliflower florets, red pepper, green beans and olives in large bowl. Whisk or blend dressing ingredients together. Pour over salad and let marinate 1 hour before serving.
