Sesame Slaw

Ingredients

1/2 small head cabbage
1/2 cup julienned red bell pepper
1/2 cup shredded carrots
1/2 cup sliced scallions
1 cup mung bean sprouts
4 tablespoons red wine vinegar -- or rice wine vinegar
2 tablespoons olive oil
1 tablespoon toasted sesame oil
1 tablespoon honey
1 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/2 cup slivered almonds -- toasted

Instructions

Quarter cabbage and remove core. Shred or slice thinly. Place in a large
bowl and combine with bell pepper, carrots, scallions and sprouts. Whisk
together vinegar, olive oil, sesame oil, honey, salt, and pepper flakes
and toss with vegetables. Let marinate in the refrigerator for at least 1
hour before serving. Just before serving, toss nuts with slaw.
