Salmon (or Tofu) Cucumber Salad [WF/GF/DF]

Makes 2 servings
Vegetarians can replace salmon with diced seasoned tofu.

Ingredients

1 (7.5-ounce) can salmon, drained
1 small red onion, diced
1 carrot, shredded
1/2 cucumber, peeled, seeded, finely chopped
1 tablespoon soy-based mayonnaise
1 1/2 teaspoons grated lemon zest
1 1/2 teaspoons fresh lemon juice
1 1/2 teaspoons finely chopped fresh dill or 3/4 teaspoon dried
Salt and pepper to taste
4 lettuce leaves

Instructions

Place salmon in medium bowl. Remove and discard skin; mash salmon with fork. Mix in remaining ingredients except lettuce. Serve salad on lettuce leaves.
