Salad Nicoise

Ingredients
1 head of romaine lettuce
1 1 / 2 pounds of fresh tuna
2 tablespoons of canola oil
1 tablespoon of tamari soy sauce
1 clove of garlic, finely chopped
6 small red potatoes, quartered
3 medium tomatoes, cut into wedges
1 / 2 pound of green beans
3 eggs, hard-boiled

Instructions
Wash, drain and spin lettuce. Tear into bite-sized pieces. Sauté small pieces of tuna in oil, tamari and garlic.
Quarter and cook potatoes, al dente, with skin on. Cut tomatoes into wedges. Steam beams until al dente. Slice hard boiled eggs.
Arrange on a platter greens, tuna, potatoes, beans and eggs. Sprinkle with capers. Use any flavored vinaigrette as a dressing.
