Real Cream of Tomato Soup [WF/GF]

Super fast but quite delicious. Add a grilled 5-year-old-cheddar sandwich for a special lunch.

yield: 1/2 gallon

Ingredients

2 tablespoons butter
3/4 cups onion, large chop
3/4 tablespoon parsley, chopped
1 3/4 cups filtered water
1- 28 oz. can Muir Glen Diced Tomatoes with Basil (or plain tomatoes, plus 2 tablespoons fresh basil)
2 cups heavy cream (don't change, just have a salad for dinner!)
1 1/2 tablespoons mock chicken stock powder (to keep vegetarian; otherwise just use chicken stock instead of the water)

Instructions

1. In butter, sauté parsley and onions till onions are slightly golden.
2. Add remaining ingredients and slowly simmer for just 15 minutes.
3. Process until smooth in blender.
