Quick Polenta Vegetarian [WF/GF]

Often served as a base for stews or chilled, sliced and broiled or grilled as a side dish.
Ingredients
4 cups water or vegetable broth
3 tablespoons butter
1 teaspoons salt (omit if using broth)
1/2 teaspoon pepper
1 cup yellow cornmeal
1/2 cup parmesan, optional
Instructions
Combine water, butter, salt and pepper in a large pot. Bring to boil. Gradually add cornmeal, whisking constantly. Reduce heat, simmer until polenta is soft and thick, stirring often. Stir in parmesan before serving.
