Quick Foccocia Pizza w/Portabellas

Using great ingredients from Lakewinds, you can make quick gourmet pizzas that are always hot and delicious.
yield: 2 medium pizzas
Ingredients
1 plain Toast to Bread Foccocia
1 15oz. can Eden org. Pizza Sauce
6 oz. red onion, medium dice
6 oz. green peppers, medium dice
4 oz. portabella mushrooms, lg dice
1/2 lb grated mozzarella (deli)
4 tablespoons grated parmesan
2 teaspoons fresh rosemary, minced
salt and pepper
olive oil
Instructions
PREHEAT OVEN TO 375°F
Carefully slice foccocia through equator to get 2 disks. Lightly oil both sides, and place on cookie sheet crust side down.
Spread 1/2 can of sauce on each disk.
Sprinkle with parmesan, then with mozzarella.
Evenly spread out veggies, add some salt and pepper and the fresh rosemary.
Bake around 15-20 minutes until lightly browning on edge cheese and piping hot in middle.
