Quick Foccocia Pizza w/ Ricotta and Sausage

Quick and fancy at the same time, using high quality ingredients... pizzas you make yourself are always fresh!!
yield: 2 medium pizzas
Ingredients
1 Toast to Bread plain Foccocia
1 15 oz. Mozzarella Fresca Ricotta
1 14.5 oz. Muir Glen Fire-roasted diced tomatoes
1 egg yolk
1/4 teaspoon salt
dash black pepper
2 tablespoons grated parmesan
olive oil
2 tablespoons fresh basil, minced
8 oz. Hans Sundried Tomato Sausage
8 oz. grated mozzarella (deli)
4 oz. Italian Mountain Gorganzola (cheese case)
Instructions
PREHEAT OVEN TO 400°F
Carefully slice foccocia through its equator to get 2 disks. Lightly oil both sides and place crust down on cookie sheets.
Drain tomatoes in colander. Mix ricotta, egg yolk, salt and pepper in bowl, then lightly mix in the tomatoes. Spread evenly over foccocia.
Sprinkle ricotta mix with fresh basil.
Sprinkle mozzarella. Top with diced sausage, and the gorgonzola (break up with your fingers over the pizza).
Top with a little freshly ground black pepper and bake 15-20 minutes until light golden brown and piping hot in the center.
Allow to cool for a few minutes before cutting to let ricotta set.
