Pineapple Zucchini Bread
1-16 slice loaf
Ingredients
1 cup brown sugar or succanat
1/2 cup butter, softened
1 cup shredded zucchini
1 cup crushed pineapple in its own juice
2 large eggs, slightly beaten
2 cups unbleached flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon allspice
Glaze:
1/2 cup powdered sugar
1 tablespoon pineapple juice
1/4 teaspoon cinnamon
Instructions
Preheat oven to 350°F. Grease and flour a 9x5 loaf pan. In a large bowl, beat brown sugar and butter together until light and fluffy. Stir in zucchini, pineapple and eggs. Add remaining ingredients and stir just until combined. Spread evenly in greased pan. Bake for 60 - 70 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan to finish cooling.
Mix glaze ingredients and spread over top of cooled loaf.
