Pico De Gallo Salad
Serves 2
Ingredients
1 small organic cucumber, sliced thinly
1 teaspoon salt
1 large ripe organic tomato, diced
1/4 sweet onion, like Walla Walla or Vidalia, chopped
1/2 head Boston Lettuce
1/4 cup chopped cilantro
Dressing:
2 tablespoon lime juice
1 tablespoon olive oil
2 teaspoon brown rice syrup
pinch salt
Instructions
Sprinkle cucumbers with salt and set aside for 30 minutes. Meanwhile, toss diced tomato and onion in a small bowl. Tear lettuce into bite-sized pieces and place in serving bowl. Stir cilantro into tomato/onion mixture. Whisk together dressing ingredients and add to tomato mixture. Rinse cucumbers well and place in serving bowl with lettuce. When ready to serve, Scoop over lettuce and cucumbers and toss to serve.
