Pesto and Asparagus Pizza

This simple pizza proves that great taste depends on quality--rather than quantity--of ingredients. Optional: can use soy cheese and/or wheat-free crust.

Ingredients

16 asparagus spears, trimmed
1 (12-inch) pizza crust or wheat-free alternative
2/3 cup pesto sauce
4 cloves garlic, thinly sliced
1/2 cup shredded mozzarella cheese (optional)
Chopped fresh basil leaves

Bring a large pot of water to a boil; add asparagus. Cook for 3 to 5 minutes, just until asparagus turns bright green. Drain immediately; set asparagus on paper towels to remove excess moisture. Spread crust with pesto; top with garlic and cheese. Arrange asparagus spears decoratively over the cheese. Bake directly on oven rack for 8 to 10 minutes until edges of pizza are golden brown. Slide a baking sheet under the hot pizza to remove from oven. Sprinkle with basil.
