Peanut Miso Dip [WF/GF/DF/V]

Ingredients
2 cloves garlic
3 inch chunk fresh ginger root, peeled
1/2 c. water
1/2 cup peanut butter (soynut butter is great too!)
2 tablespoons sweet white Miso
1/4 c. lime juice
Dash or two hot pepper sauce
Instructions
Place garlic and ginger root in work bowl of food processor or blender. Pulse until both are finely minced. Add the water, peanut butter, and Miso and process until smooth. Add lime juice and hot pepper sauce and process until smooth again. You may add more water to achieve a thinner consistency, if you'd like. Serve with a variety of fresh vegetables for dipping or toss with cooked soba noodles and some stir-fried vegetables for a quick dinner.
