Peach Cobbler [DF/V]

Serves 6

Ingredients

Filling:
6 cups peeled and sliced peaches
1/2 cup succanat or organic sugar
1/4 cup arrowroot powder
6 tablespoons lemon juice

Topping:
1/4 cup unbleached flour
1/4 cup whole grain flour, like amaranth, oat or barley
1/2 teaspoon baking powder
1/8 teaspoon salt
1/8 teaspoon cinnamon
1/4 cup water
2 tablespoon maple syrup or brown rice syrup
1 tablespoon vegetable oil
1/2 teaspoon vanilla

Instructions

Preheat oven to 350°F. In a large bowl, combine peaches, sweetener, arrowroot and lemon juice. Pour into oiled 8 x 12 baking pan. In another bowl, combine flours, baking powder, salt and cinnamon. Stir in water, sweetener, oil and vanilla just until blended. Place topping over fruit in large dollops, covering most of the fruit. Bake for 30 minutes or until top is lightly brown and cobbler seems springy to the touch. Cool some before serving. Scoop large spoonfuls on individual serving plates or bowls and top with Strawberry Peach Sauce .
