Nut Flour Cookies [WF/DF]

Very delicate and delicious. To make gluten free, use corn instead of oats.

Yield: about 20 cookies

Ingredients:

3 egg whites
1/2 cup dried coconut
1/2 cup oatmeal
1/2 cup nut flour (grind almonds or pecans in a blender to make a flour-like texture)
1/4 cup maple syrup or maple sugar
1 teaspoon vanilla extract
1/2 teaspoon sea salt

Directions:

PREHEAT OVEN TO 350°F
Beat the eggs until stiff. Fold in the rest of the ingredients. Put a piece of  parchment paper on a cookie sheet. Put a heaping tablespoon if batter on the parchment paper. Bake at 350° degrees for about 15 minutes. Cool slightly then remove from the parchment. These are very delicate and some may break as you remove them from the parchment.
