Not Your Grandma's Stewed Tomatoes

Serves 4
This is great served as a simple side dish with creamy or cheesy pasta or served over rice with grilled fish or chicken.

Ingredients

3 ripe tomatoes
2 tablespoons unsalted butter
1/4 cup chopped celery
1 small onion, diced
1 clove garlic, minced
1 tablespoon sugar
1 teaspoon grated lemon peel
1 tablespoon chopped dill
1/4 teaspoon salt
Black pepper, to taste

Instructions

Halve tomatoes and scoop out most of the seeds. Cut each tomato half into 3-4 pieces and set aside. Melt butter in medium saucepan and add celery, onion and garlic. Cover and cook over low heat for 5 minutes. Add tomatoes, sugar and lemon peel to the saucepan, cover and simmer until mixture is soft and thickened, about 20 - 30 minutes. Stir in dill, salt and pepper. Serve.
