Minted Quinoa Fruit Salad
Ingredients
1/4 teaspoon salt
2 tablespoons orange juice
6 ounces uncooked quinoa
1 1/4 cups strawberries
1/3 cup chopped mint
2 medium kiwi fruits, pared and sliced
1/4 cup vanilla yogurt
1 cup drained mandarin orange sections
Instructions
In medium saucepan, bring 2 cups water and salt to boil; add quinoa. Reduce heat to low and simmer for 15 minutes, until quinoa appears translucent. In food processor or blender, combine mint, yogurt and juice; puree until smooth.
Set aside 6 strawberry slices and 3 kiwi slices for garnish. In large serving bowl, combine remaining strawberries, kiwi and the mandarin orange sections. Pour yogurt sauce over fruit mixture and toss to coat. Add the quinoa and toss gently to mix. Garnish with reserved strawberry and kiwi slices. Refrigerate 1-2 hours until chilled.
