Minted Pea Tortellini Salad
Ingredients
3/4 lb. frozen tortellini cooked and drained
1 1/2 pints frozen peas
3/4 bunch scallions, chopped
3/4 red or yellow bell pepper, julienned
Dressing:
1/3 cup light mayo
1/3 cup sour cream
3 tablespoons pesto sauce
1 1/2 tablespoons mint, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
Instructions
Toss salad ingredients together. Whisk dressing ingredients together. Toss all together at serving time.
