Maple Walnut Muffins

Ingredients
Batter:
1 1/4 cups whole wheat pastry flour
1 cup unbleached flour
1 tablespoon baking powder
1/4 teaspoon salt
1 1/4 cups soy milk or rice milk
1/4 cup canola oil
1/4 cup maple syrup
1 large egg
Filling:
1/2 cup maple syrup
1/2 cup walnuts finely chopped
6 tablespoons whole wheat pastry flour
2 teaspoons cinnamon
2 tablespoons canola oil
Instructions
Preheat oven to 350°F. To make batter: Stir together dry ingredients in a large bowl. In a medium bowl, whisk together moist ingredients. Fold this into dry ingredients just until combined. To make filling: Stir ingredients together in a small bowl until combined. Line muffin tins with papers. Scoop 2 tablespoons batter into each cup. Top with 1 tablespoon filling. Top with 1-2 tablespoons remaining batter. Bake for 20 minutes or until muffin springs back when touched.
