Maple Glazed Yams and Apples [WF/GF]

Yields: 6 servings

Ingredients:

<all ingredients organic>
2 lbs. jewel yams, peel and sliced  1/2” thick
1 lb. Braeburn apples, peel and cut  into lg. chunks
2/3 cup maple syrup
5 tablespoons butter
juice and zest of one orange
1 teaspoon vanilla

Instructions:

PREHEAT OVEN TO 375°F
1. Zest the orange into a small saucepan, then juice the orange into the pan as well. (don’t worry about seeds, we’ll screen out).
2. Add maple syrup, vanilla and butter, bring to boil, turn down and simmer for a few minutes while you…
3. Butter a 9” x 13” pan.
4. Place yams and apples (the apples should be chunky.. thicker than yams so they don’t cook too fast) in the buttered pan.
5. Pour the maple/orange liquid through a fine sieve (or use a fork to remove the seeds and zest) over the yams/apples, toss a bit, and place in oven.
6. Bake for 1 hour, basting every 15 minutes with the liquid in pan. Bake until yams are tender and juice is syrupy.
