Lemon-Chive Blue Cheese Dressing

Lower fat version of a classic / great as a dip
yield: 3 cups
Ingredients
1 1/2 teaspoons extra virgin olive oil
1 tablespoon minced garlic
zest of 1/2 lemon, finely minced
1 tablespoon lemon juice
3/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground
1 1/2 cups Horizon organic sour cream
1 cup Horizon low fat yogurt
3 tablespoons chives, fresh, minced
6 1/2 ounces Big Woods Sheep Blue Cheese
Instructions
Lightly sauté the garlic and zest, but dont let brown. In stainless or glass bowl, mix lemon juice, salt and pepper until salt is dissolved. Stir in the garlic/zest/oil, as well as sour cream and yogurt. When well blended, crumble in the blue cheese. Mix very well with whisk, mashing any big chunks at bottom of bowl. Let sit 1 hour before serving so flavors meld.
