Left-Over Turkey (or Un-Turkey) Stir Fry

Ingredients
Sauce:
1 tablespoon arrowroot
1/3 cup broth
1 tablespoon tamari or shoyu
1/2 teaspoon toasted sesame oil
1 teaspoon honey or brown sugar (optional)
Stir Fry:
1 tablespoon peanut oil
1 tablespoon minced fresh ginger
2 cloves garlic, minced
1 cup thinly sliced nappa cabbage
1 medium onion, slivered
1/2 pound snow peas or green beans, ends trimmed off
1/2 pound mushrooms, sliced or quartered
3-4 cups leftover turkey or Un-Turkey, chopped
Instructions
Combine sauce ingredients in a small bowl and set aside. Assemble all remaining ingredients. Heat oil in wok or Dutch oven over high heat. Add peanut oil and heat. Add ginger and garlic. Cook 10-20 seconds. Add nappa and onion and cook 1-2 minutes. Add snow peas and mushrooms. Cook 1-2 minutes more. Add turkey and cook until heated through. Stir in sauce and cook until thickened and sauce coats the turkey and vegetables. Serve, hot, garnished with a few chopped scallions.
