Lakewinds Vegan Toll House Cookies [DF/V]

Ingredients

14 oz. safflower margarine
1 cup fructose
1 1/4 cup Sucanat
1/3 cup rice syrup
1 teaspoon vanilla
1 1/2 bananas
3 cups organic unbleached white flour
2 cups whole wheat pastry flour
1 tablespoon baking powder
1 1/2 teaspoons baking soda
3 cups malt sweetened chocolate chips(or other vegan chocolate)
1 cup walnut pieces

Instructions

Cream margarine, fructose, Sucanat, rice syrup and vanilla. Beat in bananas. Combine all dry ingredients well and then mix into margarine mixture. Fold in chips and walnuts. Scoop onto greased baking sheet. Bake at 350°F for 12-15 minutes. Do not overbake, or cookies will be dry.
