Italian White Wine Sauce

One of life's nice (but make it rare) indulgences, a real cream sauce makes your meal a special event.
yield: 1 1/2 cups
Ingredients
1 1/3 oz. shallot, sliced thin
1 1/4 cups good chardonnay
1/2 teaspoon black peppercorns
2 cups organic heavy cream
1 teaspoon fresh basil, fine mince
1/2 teaspoon fresh thyme, fine mince
1/3 teaspoon salt
1/4 cups Parmigiano-Reggiano
Instructions
In non-reactive saucepan, boil chardonnay, sliced shallots and peppercorns until wine is reduced to 1/2 cup. Strain wine to remove peppercorns and shallots (press hard to get all the wine), and pour wine back into pan. Add cream, and boil over medium heat until sauce has thickened (total volume will be around 1 1/2 cups). Off heat, whisk in the cheese, salt, thyme and basil.
