Individual Cheddar Pizzas

This is a great recipes to make with kids.
Makes 4 small pita-pizzas.

Ingredients

8 ounces diced savory baked tofu or cooked skinless chicken
1/2 cup pizza sauce
1 green onion, thinly sliced
1 clove garlic, minced
4 (7-inch) garlic-flavored pocket breads or wheat-free alternative
1 small green bell pepper, sliced into thin rings
1 cup (4 ounces) Cheddar cheese or nondairy alternative

Instructions

Heat oven to 450°F. In medium bowl combine tofu, pizza sauce, green onion and garlic. Place pocket breads on baking sheet. Spoon tofu mixture evenly onto bread. Top with bell pepper rings and cheese. Bake until cheese melts and topping is heated through, about 15 minutes. Line baking sheet with foil for speedy clean-up.
