Honey Carrot Cake

Ingredients

1 large egg
1 teaspoon baking powder
2 egg whites
1/2 teaspoon baking soda
3/4 cup honey
1/2 teaspoon allspice
1/2 cup butter, melted
1/4 teaspoon salt
1 teaspoon vanilla
1 1/2 cups finely shredded carrots
1 1/2 cups flour
1/3 cup raisins
1 1/4 teaspoons cinnamon

Instructions

Beat egg and egg whites together until light and frothy. Beat in honey, butter and vanilla. Sift together flour, cinnamon, baking powder, baking soda, allspice and salt; stir dry ingredients into egg mixture. Fold in carrots and raisins. Pour batter into greased 8" square baking pan. Bake at 350°F, 40-45 minutes. Cool 10 minutes, remove from pan and cool completely. 12 servings
