Hijiki Stir-Fry [WF/GF/DF]

This recipe promises a culinary adventure! If you're not up to trying hijiki just yet, go ahead and use chard instead.

For Vegan, skip the honey.

Ingredients

1/3 cup dried hijiki or 2 cups chopped chard
2 tablespoons miso
1 tablespoon honey
1/4 cup water
1 teaspoon grated fresh gingerroot
Dash cayenne
1 tablespoon vegetable oil
1 small onion, thinly sliced
3 cups assorted chopped vegetables (broccoli, carrots, green beans, cauliflower)
1 tablespoon toasted sesame seed*

Instructions

In bowl cover hijiki with water; let soak for ten minutes. Meanwhile, in separate small bowl combine miso, honey, gingerroot, 1/4 cup water and the cayenne. In large skillet heat oil over medium-high until hot. Stir fry onion and assorted vegetables 5 minutes.

Drain and rinse hijiki; add to skillet. Stir-fry 1 minute. Add miso mixture. Stir briefly; cover. Reduce heat to medium-low. Steam 5 minutes or until vegetables are cooked to desired tenderness. Sprinkle with sesame seed.
