Herbed Feta Pizza
Tangy feta cheese adds zip to this vegetarian pizza. Nondairy cheese can be substituted, but the flavors and texture will change.
Ingredients
1/2 cup pine nuts or chopped walnuts
1 small red onion, sliced into thin rings
1 (12-inch) pizza crust or wheat-free alternative
4 ounces feta cheese
Finely chopped fresh basil, oregano and chives (1/4 cup total)
2 tablespoons olive oil
3 cloves garlic, minced
Instructions
Heat oven to 450°F. Spread nuts on a small baking sheet and place in oven to toast for 6 minutes while oven preheats. Meanwhile, arrange onion rings evenly over pizza crust. Crumble cheese over crust; top with herbs and toasted nuts. In a small bowl combine oil and garlic; drizzle evenly over pizza. Bake directly on oven rack for 8 to 10 minutes until edges of pizza are golden brown. Slide a baking sheet under the hot pizza to remove from oven.
Makes 6 servings.
