Grilled Tuna with Mango Salsa

Adapted from Lakewinds Natural Foods Cookbook

Serves 4

Ingredients

Marinade:
1/4 cup rice vinegar
1 tablespoon canola oil
2 tablespoons grated fresh ginger

Mango Salsa:
2 tablespoons vinegar (your favorite, or use lemon juice)
1 ripe mango, peeled and diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 jalapeno*, seeds removed and diced
1/2 cucumber, peeled, seeded, and diced
1/2 bunch cilantro, rinsed, dried and minced
1/4 cup chopped onion
salt and pepper

*DO NOT touch your face or eyes while handling the jalapeno until youve washed your hands with hot soapy water to remove the hot.

Instructions

Combine salsa ingredients in bowl and let sit at room temperature while preparing the rest of meal. Let tuna sit for 30 minutes in marinade in fridge. While marinating, prepare your grill and whatever else youre including in the meal. Grill tuna 3 minutes on each side, basting with marinade. Depending on thickness, may need another 2-3 minutes. Place tuna on plate with rice or salad, and spoon salsa over tuna. The salsa is good with chicken or just rice, and keeps for up to a week so its great for leftovers.
