Green Pea Soup [WF/GF/DF/V]
Dairy-free
This pretty puree couldn't be simpler to make! Stir diced savory tofu or cooked ham into pureed soup for heartier fare.
Ingredients
2 tablespoons olive oil
2 ribs celery, chopped
1 onion, chopped
2 cloves garlic, minced
2 cups vegetable or chicken broth
3 cups frozen green peas, thawed
1/8 teaspoon white pepper
1/2 cup soymilk or other nondairy alternative
1/8 teaspoon freshly grated nutmeg
Instructions
In a large heavy soup pot heat oil over medium heat until hot. Sauté celery, onion and garlic 5 minutes. Add broth, peas and white pepper. Cover; simmer 5 minutes. Pour soup into blender or food processor. Puree; return to pot. Add soymilk and nutmeg. Heat 5 minutes longer, stirring occasionally.
