Green Bean, Walnut and Sun-Dried Tomato Salad

Ingredients

1 lb. green beans, steamed 5 minutes
1 cup coarsely chopped walnuts, lightly toasted
2/3 cup marinated sun-dried tomatoes, drained and cut in julienne pieces
For Dijon Vinaigrette:
1/3 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
Salt and freshly ground pepper to taste
1 clove garlic, minced
1 tablespoon chopped fresh parsley

Instructions

Place green beans, walnuts and tomatoes in a serving bowl.
Make dressing by whisking together oil, vinegar, mustard, salt, pepper, garlic and parsley in a small bowl. Pour dressing over vegetables and toss.
Chill and let marinate at least 4 hours and up to 24 hours. Toss again before serving.
