Greek Spinach Salad

Ingredients

3/4 cup olive oil
1/2 cup vinegar of choice
1/4 cup tamari soy sauce
1 tablespoon dried tarragon
1 14 oz. can artichoke hearts, quartered
1 small red onion thinly sliced
2 medium tomatoes, cut into wedges
1/2 pound spinach, washed and stems removed
1 cup grated carrots
1 cup mushrooms, sliced
1 cup crumbled feta cheese
1/2 cup Mixed Country Olives, pitted and halved

Instructions

Whisk together olive oil, vinegar, tamari and tarragon. Stir in artichoke hearts, tomatoes and onions. Allow to marinate for 2 hours. Place spinach, carrots, mushrooms, feta and olives in large bowl. Toss together. Remove vegetables from marinade and toss with spinach. Serve immediately. Pass remaining marinade at the table for dressing.
