Greek Egg Casserole [WF/GF]

Ingredients

12 large eggs, beaten
1/3 cup of milk
1/2 pound mushrooms, sliced
1 10-ounce package frozen spinach thawed and squeezed to remove excess moisture
8 ounces feta cheese, crumbled
1 teaspoon dried dill
1 teaspoon dried oregano

Instructions

Preheat oven to 350°F. Spray 13 x 9 baking dish with no-stick spray. Beat eggs in
large mixing bowl. Add milk, mushrooms, spinach, onion, feta, dill and oregano. Pour
into prepared pan. Bake for 40 minutes or until set. Serve garnished with chopped fresh parsley.
