Gorgonzola Onion Pie

Ingredients

1 individual pie crust, basic
1 tablespoon Parmesan cheese
3 tablespoons olive oil
2 1/2 cups onions chopped coarsely
1 teaspoon garlic minced
2 cups tomato canned diced, drained
1 teaspoon oregano
dash salt
1/2 teaspoon pepper
1 cup blue cheese crumbled
1 cup mozzarella cheese shredded

Instructions

Prebake crusts 7 - 9 minutes. Sprinkle with Parmesan. Set aside. Heat oil in skillet over medium-low heat. Add onions. Cook until soft and golden (about 15 - 20 minutes). Add garlic. In separate skillet, cook tomatoes, oregano, salt and pepper until slightly reduced and thick. Spoon over crust. Top with onions and sprinkle with cheeses. Bake 10 - 20 minutes at 350°F.
